The catalogue, search, sets, set completion and the card scanner all follow the language you pick. The site's own menus stay in English. Coverage differs by language: it is what the open card databases hold. Prices: Japanese cards use their own Cardmarket listings; French, German, Italian, Spanish and Portuguese cards use the card's single Cardmarket price, which is not split by language; the other languages have no automatic price.

Card values come from Cardmarket's daily price list and refresh by themselves every day. There is nothing you need to do.
Every value is an estimate. It is worked out from published market statistics, so it is a guide to what a card is worth, not a quote or an offer to buy.
Where an estimate can be off. Cardmarket keeps one listing per card for every language and condition, sometimes together with the 1st Edition, so a few expensive sales can lift its figures. When a listing's figures are far apart the app checks them against TCGplayer and tells you, in the note under the price, what it used and why. Rare and played cards are the hardest to estimate.
Getting the real figure. Every card has links, under its price, to the Cardmarket offers for your card's condition, eBay sold listings, TCGplayer and PriceCharting. Check them, type your own value, and the app keeps it: a value you entered by hand is never overwritten by a price update.

Photos of cards in toploaders, or held in a hand, still work, but the edges and the grade are less reliable. Add a photo of the back too for edge and corner wear.
This is a rough estimate from one photo of one side, and it depends on the guide lines being placed well. It is not a grade from PSA or any grading company, and it cannot see the back of the card.
